Light and fluffy homemade lemon muffins that are topped with a lemon powdered sugar drizzle.

Lemon Muffins

  • ½ cup olive oil or melted butter
  • 1 cup white granulated sugar
  • 2 cups all purpose flour
  • 3 eggs
  • 2 Tablespoons milk
  • 2 Tablespoon lemon juice
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 2 Tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • For additional lemon flavor add 1 teaspoon of lemon extract

Glaze

  • 1 cup powdered sugar
  • 2 Tablespoon lemon juice

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Line a muffin tin with liners or spray with nonstick spray. Set aside.
  2. In a large bowl, whisk sugar, olive oil and eggs with an electric handheld mixer until smooth. Stir in the milk, vanilla extract, lemon extract (if using) and lemon juice.
  3. In a separate mixing bowl combine dry ingredients and add to wet ingredients. Mix on low until everything combines. Stir in lemon zest.
  4. Pour the batter into the prepared muffin tin.
  5. Bake for 15-20 minutes or until toothpick inserted into the center comes out clean or with a few breadcrumbs.
  6. Let the muffins cool before moving to the next step.
  7. Make the glaze by combining all the ingredients. Drizzle over the muffins with a spoon or a fork and let set. Garnish with lemon zest of 1-2 lemons (optional).

  • What Can You Add To Lemon Muffins?If you like lemon poppy seed muffins, you can add poppy seeds to the batter. Or mix in some blueberries to make lemon blueberry muffins. Other fruit would work, too, like raspberries or chopped strawberries.
