Simple Lemon Pudding Cake is super moist, so light, uses only a few ingredients and perfect for any occasion! This recipe is a definite keeper!

Ingredients
Cake
- 1 package lemon cake mix
- 1 package instant lemon pudding mix 4 serving size
- 4 large eggs
- 1 cup cold water
- ⅓ cup vegetabke oil
Icing
- 1 ½ cup cold milk
- 1 package instant lemon pudding mix 4 serving size
- 1 tub dessert topping mix
Instructions
For the Cake:
- Preheat your oven to 350 degrees. Prepare a 13x9 inch pan with cooking spray and set aside.
- In a large bowl combine cake mix, instant lemon pudding mix, eggs, water and oil.
- We usually use a handheld mixer to blend these ingredients together for a few minutes.
- Pour into your prepared pan.
- Bake for 30 minutes or until a toothpick inserted into the center comes out clean. This cake will also bounce back when pressed with your finger when cooked.
- Cool for about 15 minutes in the pan before dumping on to a rack to cool completely. Prepare your icing.
For the Icing:
- Pour cold milk into a deep, narrow bowl.
- Add instant lemon pudding mix and dessert topping mix.
- Beat slowly with a handheld blender until combined.
- Then increase your speed until mixture forms still peaks, about 5 minutes.
- Spread all over cake. Serve and enjoy!
