Lemon Ricotta Cookies

These glazed Lemon Ricotta Cookies are pillowy soft and deliciously chewy, with a bright, zesty flavor in every bite.

For the Cookies

  • 2 cups Super Fine Almond Flour
  • ¾ cup whole milk ricotta room temperature
  • ¾ cup monk fruit/allulose
  • ¼ cup oat fiber
  • ¼ cup unsalted butter room temperature
  • 1 whole egg room temperature
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons lemon zest
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ¼ teaspoon salt

For the Lemon Glaze

  • ½ cup powdered monk fruit/allulose
  • 1-2 tablespoons fresh lemon juice
  • 2 teaspoons heavy cream

Instructions

To Make the Cookies

  1. Add the butter, ricotta and sweetener to a mixing bowl. Whip using a hand mixer until fluffy.
  2. Add in the egg, lemon juice, lemon zest and vanilla, then continue mixing until well combined.
  3. In a separate bowl, add in the almond flour, oat fiber baking powder and salt. Whisk to combine, then pour it into the wet ingredients.
  4. Mix just until combined, but don’t over mix it. Cover and chill dough in the fridge for 1 hour.
  5. Preheat oven to 350°F.
  6. Using a cookie scooper, scoop out the dough and place them on a baking sheet lined with parchment paper. Space at least 1 inch apart to allow for slight spreading. They won’t actually spread too much.
  7. Bake for 12-14 minutes or until cooked through and slightly golden. Set them on a cooling rack to cool completely before making the glaze.

To Make the Lemon Glaze

  1. Add the sweetener, heavy cream and most of the lemon juice to a mixing bowl.
  2. Whisk to combine and add in more lemon juice if needed to get the consistency you want. You are looking for a thicker glaze that is slightly runny.
  3. Once the cookies have cooled completely, add some of the glaze over the top, then place them back on the cooking rack to set before serving.
