Lime Coleslaw

Simple and healthy coleslaw with lime and cilantro.

Ingredients

  • 3 cups carrot shredded
  • 4 cups cabbage shredded; green, purple or a combination
  • ¾ cup cilantro chopped
  • 2 cups bell pepper thinly sliced; sweet variety
  • 2-3 lime
  • cup green onion sliced
  • salt to taste
  • black pepper to taste
  • 2 jalapeno pepper sliced; optional

Instructions

  1. Combine the carrots, cabbage, cilantro, bell peppers and jalapeños (if using) in a large bowl.
  2. Squeeze the lime juice over the vegetables and toss together.
  3. Season with salt and pepper to taste.
  4. Cover the salad and let it sit in the refrigerator for an hour or overnight. 

Notes

  • You can also substitute pre-shredded coleslaw mix for the carrots and cabbage
  • If you are not on Whole30, mix the lime juice with a tablespoon of honey and then drizzle and toss over the coleslaw for a sweeter variation
