Lime Coleslaw

Simple and healthy coleslaw with lime and cilantro.

Ingredients
- 3 cups carrot shredded
- 4 cups cabbage shredded; green, purple or a combination
- ¾ cup cilantro chopped
- 2 cups bell pepper thinly sliced; sweet variety
- 2-3 lime
- ⅓ cup green onion sliced
- salt to taste
- black pepper to taste
- 2 jalapeno pepper sliced; optional
Instructions
- Combine the carrots, cabbage, cilantro, bell peppers and jalapeños (if using) in a large bowl.
- Squeeze the lime juice over the vegetables and toss together.
- Season with salt and pepper to taste.
- Cover the salad and let it sit in the refrigerator for an hour or overnight.
Notes
- You can also substitute pre-shredded coleslaw mix for the carrots and cabbage
- If you are not on Whole30, mix the lime juice with a tablespoon of honey and then drizzle and toss over the coleslaw for a sweeter variation
