Lime Slice with Pomegranate Frosting

Lime Slice with Pomegranate Frosting - tangy lime juice and coconut in a no-bake crushed biscuit base, then topped with a pomegranate frosting.

Base Ingredients

  • 250 g Marie biscuits
  • 3 limes - juice and zest
  • 90 g butter melted
  • 90 g desiccated coconut
  • 200 g sweetened condensed milk

Frosting Ingredients

  • 3 tablespoon pomegranate juice I used fresh (see my notes)
  • 300 g icing/confectioners sugar
  • 70 g butter at room temperature
  • 1 tablespoon desiccated coconut for sprinkling

Instructions

  1. Grease and line a 20cm x 20cm (8" x 8") baking tin (see my notes).
  2. Place the biscuits into a food processor and process into fine crumbs.
  3. Place biscuit crumbs into a large bowl along with sweetened condensed milk, desiccated coconut, melted butter, lime juice and lime zest then mix well to combine.
  4. Press base mixture into the prepared tin and smooth the top.
  5. For the frosting, mix together the icing sugar room temperature butter and pomegranate juice until smooth.
  6. Spread frosting evenly over the biscuit base. Sprinkle with extra coconut and refrigerate until firm.

  • *Please note that the amount of calories per serve is provided as a guide only, as ingredients and cooking methods can vary greatly*
  • The tin I have used is 20cm x 20cm (8" x 8") - a little bigger or smaller would be ok too.
  • If you haven't got a baking tin this size, keep in mind that because this slice is no bake you don't have to limit yourself to a baking tin. Maybe you might have something else the right size such as a plastic container like tupperware etc.
  • If you are using a fresh pomegranate to make the pomegranate juice (I did) then this post will show you an easy way to get the seeds out. Then I just crushed the seeds through a fine sieve to get the juice.
