Loaded Zucchini Bites

Delicious loaded zucchini bites recipe for appetizers or starters. Tender zucchini rounds topped with cheese, bacon, and ranch sour cream!

Ingredients

  • 2 medium zucchini sliced into ¾-inch-thick rounds, about 12 ounces each
  • 1 teaspoon kosher salt
  • 1 tablespoon extra virgin olive oil
  • ¼ cup sour cream 57.5 g
  • 1 teaspoon ranch seasoning mix dry
  • 1 cup sharp cheddar cheese finely shredded, divided
  • 3 lices Bacon cooked, crumbled, divided
  • Chives, chopped for garnish
  • salt to taste

Instructions

  1. In a large bowl, combine zucchini and salt. Toss to combine.
  2. Transfer the salted zucchini rounds to a colander for 1 hour. (This allows the excess water to drain off.)
  3. Preheat oven to 475°F and line a large baking sheet with parchment paper. Set aside.
  4. After an hour, pat the zucchini completely dry with paper towels.
  5. Arrange the zucchini in a single layer on the lined baking sheet. Drizzle with olive oil.
  6. Bake for 17-19 minutes, or until browned on the bottom.
  7. Remove the pan from the oven and carefully flip the zucchini. Sprinkle cheese evenly over the zucchini bites. Bake for 3 to 5 minutes, or until the cheese is melted.
  8. While the zucchini is baking, mix the sour cream and dry ranch seasoning in a small bowl.
  9. Top each baked zucchini round with a dollop of the sour cream mixture.
  10. Sprinkle with the crumbled bacon and chopped chives.
  11. Serve immediately.
