Ingredients
- 1 lb elbow macaroni
- 2 fresh lobster tails chopped
- 2 Tablespoons olive oil
- 2 Tablespoons salted butter divided
- 1 teaspoon minced garlic
- ¼ cup diced onion
- 4 cups heavy cream
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon Cajun Seasoning (such as Slap Ya Mama) or creole seasoning
- 2 cups shredded Mozzarella cheese divided
- 2 cups sharp cheddar cheese divided
- 12 ounces Bacon cooked and crumbled
- ¼ cup panko breadcrumbs
- salt and pepper to taste
Instructions
- Cook the elbow macaroni in water according to the package instructions for al dente pasta. Drain and set it aside.
- In a large saucepan, cook the bacon until it becomes crispy. Remove, drain the excess oil, and set it aside.
- In the same large saucepan, heat olive oil over medium heat. Add the diced onion and garlic, sautéing until fragrant and translucent (about 2-3 minutes). Add the lobster meat and sauté for an additional 1-2 minutes. Remove from heat and set aside.
- In the same saucepan, add butter and let it melt. Gradually pour in the heavy cream, cooking on medium-low heat for 3-4 minutes until slightly thickened.
- Add the onion powder, garlic powder, smoked paprika, Cajun seasoning, and salt to taste. Stir and taste to adjust the seasoning.
- Stir in 2 cups of the shredded mozzarella and cheddar cheese mixture. Continue stirring until the cheese is fully melted and the sauce becomes smooth and creamy.
- Add the cooked macaroni to the cheese sauce. Stir until everything is evenly combined.
- Preheat your oven to 350°F (175°C). Pour half of the macaroni mixture into an 8x8 casserole dish. Sprinkle 1 cup of the mozzarella and cheddar cheese mixture over the top. Add the remaining macaroni mixture, then top with the final 1 cup of cheese.
- Evenly sprinkle the crumbled bacon and panko breadcrumbs over the top of the casserole.
- Bake in the preheated oven for 20 minutes or until the top is golden brown and bubbly. If you prefer a crispier top, broil for 1-2 minutes at the end.
- Remove the casserole from the oven and let it sit for 5 minutes before serving. Enjoy this luxurious and creamy baked lobster mac and cheese, perfect as a main course or an elegant side dish.
