  • 1 lb elbow macaroni
  • 2 fresh lobster tails chopped
  • 2 Tablespoons olive oil
  • 2 Tablespoons salted butter divided
  • 1 teaspoon minced garlic 
  • ¼ cup diced onion
  • 4 cups heavy cream
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon Cajun Seasoning (such as Slap Ya Mama) or creole seasoning
  • 2 cups shredded Mozzarella cheese divided
  • 2 cups sharp cheddar cheese divided
  • 12 ounces Bacon cooked and crumbled
  • ¼ cup panko breadcrumbs
  • salt and pepper to taste

Instructions

  1. Cook the elbow macaroni in water according to the package instructions for al dente pasta. Drain and set it aside.
  2. In a large saucepan, cook the bacon until it becomes crispy. Remove, drain the excess oil, and set it aside.
  3. In the same large saucepan, heat olive oil over medium heat. Add the diced onion and garlic, sautéing until fragrant and translucent (about 2-3 minutes). Add the lobster meat and sauté for an additional 1-2 minutes. Remove from heat and set aside.
  4. In the same saucepan, add butter and let it melt. Gradually pour in the heavy cream, cooking on medium-low heat for 3-4 minutes until slightly thickened.
  5. Add the onion powder, garlic powder, smoked paprika, Cajun seasoning, and salt to taste. Stir and taste to adjust the seasoning.
  6. Stir in 2 cups of the shredded mozzarella and cheddar cheese mixture. Continue stirring until the cheese is fully melted and the sauce becomes smooth and creamy.
  7. Add the cooked macaroni to the cheese sauce. Stir until everything is evenly combined.
  8. Preheat your oven to 350°F (175°C). Pour half of the macaroni mixture into an 8x8 casserole dish. Sprinkle 1 cup of the mozzarella and cheddar cheese mixture over the top. Add the remaining macaroni mixture, then top with the final 1 cup of cheese.
  9. Evenly sprinkle the crumbled bacon and panko breadcrumbs over the top of the casserole.
  10. Bake in the preheated oven for 20 minutes or until the top is golden brown and bubbly. If you prefer a crispier top, broil for 1-2 minutes at the end.
  11. Remove the casserole from the oven and let it sit for 5 minutes before serving. Enjoy this luxurious and creamy baked lobster mac and cheese, perfect as a main course or an elegant side dish.
