Low Carb No Bake Cream Pie Topped with Peaches

This Low Carb No Bake Cream Pie features a crust made from almond meal and sweetener, filled with a creamy mix of whipped heavy cream and softened cream cheese sweetened with erythritol and vanilla. The pie is chilled to set and topped with fresh peaches or other fruit, creating a sweet, creamy dessert without baking.

Description

The crust is made by combining almond meal, a sugar substitute, and melted butter, which is pressed into a pie plate and briefly baked to set. Meanwhile, the filling blends room-temperature cream cheese with whipped heavy cream, vanilla extract, erythritol, and stevia glycerite, creating a smooth and light cream cheese mousse without added flour or gelatin.

After the chilled crust has cooled, the filling is spooned in and the pie is refrigerated for at least 30 minutes to firm up. Before serving, fresh peaches can be arranged atop the filling to add a natural fruity sweetness and decorative touch. This dessert offers a low carbohydrate option for those limiting sugar and grains.

The recipe notes macronutrients were calculated without toppings, so adding fruit will affect nutritional values. The no-bake process makes this dessert straightforward, retaining fresh fruit flavor and creamy texture.
