Magic Broccoli (Best roasted broccoli recipe ever!)
Description
Magic Broccoli starts by cutting medium to large broccoli heads into florets and tossing them with extra virgin olive oil, sliced garlic, salt, and black pepper. Roasting at 220°C (425°F) until just tender with lightly browned tips yields broccoli that is tender-crisp with pleasant caramelized notes.
Finishing with fresh lemon juice, lemon zest, and grated Parmesan cheese adds brightness, acidity, and umami richness, respectively. The Parmesan melts slightly, coating the broccoli lightly and complementing the garlic and lemon flavors. This creates a balanced dish with a mix of textures: crisp edges and tender centers.
The recipe encourages using the broccoli stems by peeling and chopping them for use in other dishes such as soups or stir-fries, minimizing waste and enhancing overall kitchen efficiency.
Ingredients
- 2 broccoli about 1 kg / 2 lb, medium to large heads
- 2 garlic finely sliced or minced, cloves
- 2 1/2 tbsp extra virgin olive oil
- 1/2 tsp salt (adjust to your taste)
- black pepper
- lemon zest of half
- 1 tbsp lemon juice
- 2 tbsp Parmesan Cheese plus more for garnish, freshly grated
Instructions
- Preheat oven to 220°C/425°F (200°C fan).
- Cut/break broccoli into florets and pile onto baking tray. (Note 2 re: stem)
- Toss - Drizzle all over with extra virgin olive oil, scatter with garlic, salt and pepper. Toss with fingers or tongs, then spread out over tray in a single layer (or toss in large bowl or ziplock bag).
- Roast for 20 to 25 minutes until the tips of the florets are slightly browned and crispy. The broccoli should be "tender crisp", meaning just cooked through, not soft and floppy.
- Finish - Remove from the oven and immediately drizzle over the lemon juice, zest, and parmesan. Toss quickly, transfer to serving plate and garnish with a bit more parmesan. Serve warm!
Notes
- Broccoli heads shrink during roasting; heads about 8-9" wide are recommended.
- Don't discard broccoli stems; peel and chop them to use in stir-fries, soups, or sauces.
