Ingredients
- 2 sweet potatoes, peeled and diced
- 1 tbsp olive oil
- Sea salt and freshly cracked pepper, to taste
- 1½ tbsp butter
- 1½ tbsp real maple syrup

Instructions
- Preheat the oven to 375 degrees.
- Peel and dice the sweet potatoes then place on a large baking sheet. Drizzle with olive oil then season with sea salt, and freshly cracked pepper, to taste. Toss well to coat evenly.
- Place in the oven to roast for 25 minutes, stirring halfway through bake time.
- Meanwhile, make the maple brown butter by melting the butter over medium heat in a small saucepan, stirring often, until melted. It will start to bubble, foam, and separate then will turn golden brown with a nutty aroma. Side Note: Watch the butter carefully while cooking because it can burn quickly & easily.
- Remove from the heat and pour into a small dish then immediately add the maple syrup and whisk until well combined; set aside until needed.
- Once the sweet potatoes have roasted for 25 minutes, drizzle the maple brown butter over them then carefully toss to coat. Continue to roast for 1-2 minutes.
- Remove from the oven and serve. Enjoy.
