The preparation combines lime juice and zest with a shot of gin, minced bird's eye chili, ginger, mirin, and sugar to create an intensely flavored marinade. After shaking the ingredients together, the marinade is spooned over fresh oysters just before serving. For a deeper taste, the oysters can sit covered in the marinade for up to an hour, allowing flavors to meld.
The flavor is bright from the lime and ginger, spicy from the chili, mildly sweet from the mirin and sugar, and subtly boozy from the gin. The marinade balances these elements to accent the oysters without overwhelming their natural briny taste.
Adjust chili seed content to control heat and reduce gin quantity if a less alcoholic flavor is desired. Serving immediately ensures freshness and preserves texture.
Ingredients
- 1 lime juice
- 1 teaspoon lime zest finely grated
- 1 gin shot
- 1/2 teaspoon ginger
- 1 teaspoon mirin
- 1 teaspoon white sugar
- 1/2 bird's eye chili red
- 2 oyster dozen Sydney rock
Instructions
- Place all the above ingredients in a jar, cover with a lid and shake vigorously.
- Take a teaspoon and drizzle small amounts of the marinade over each oyster just before serving.
- For a more intense flavor; spoon over the oysters one hour before serving.
- Note that this recipe is intended to have a fair bit of kick. If it is too spicy, remove the chili seeds before chopping. And if you feel there's a little too much alcohol, hold back on half the gin.
