Ingredients

  • 2 zucchini thinly sliced
  • 4 tablespoon apple cider vinegar
  • 4 cloves garlic pushed through a garlic press
  • 2 teaspoon honey
  • 6 tablespoon olive oil
  • 5 tablespoon dill chopped
  • ½ teaspoon salt
  • raspberry optional for garnish
  • pomegranate seeds optional for garnish

Instructions

  1. In a medium bowl combine apple cider vinegar, garlic, honey, olive oil, dill and salt.
  2. Using a knife or vegetable peeler, slice zucchini into thin ribbons.
  3. Toss zucchini with the marinade and let it sit on a counter for 20 minutes.
  4. Before serving, garnish with raspberries or pomegranate seeds if desired.
  5. Enjoy!
