Maruya are Filipino banana fritters made by coating ripe but firm saba bananas in a lightly sweetened batter, then frying until golden and crisp. Description

Maruya begins by mixing flour, sugar, baking powder, and salt into a dry mix. An egg, cold milk, and melted butter are blended to form a smooth batter that coats the banana slices evenly. The saba bananas are sliced lengthwise to maintain a consistent frying thickness. Coating the bananas with batter ensures a crispy, golden crust develops when fried.

The maruya are cooked in hot canola oil for 1 to 2 minutes per side until golden brown. The quick frying seals the bananas inside a light, tender crust. After frying, the fritters are drained on paper towels to remove excess oil and then dusted with sugar, adding a crunchy sweetness on the surface.

  • 1 cup flour
  • ½ cup sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 egg
  • 1 cup milk cold
  • 2 tablespoons butter melted
  • canola oil
  • 6 banana saba variety, ripe but firm, peeled and sliced lengthwise into about ¼ inch-thick

Instructions

  1. In a bowl, sift together flour, ¼ cup of the sugar, baking powder, and salt.
  2. In a large bowl, beat egg.
  3. Add milk and butter and whisk together until blended.
  4. Add flour mixture to milk mixture and stir until just moistened. DO NOT OVERMIX.
  5. In a pan over medium heat, heat oil.
  6. Dip banana slices into batter to fully coat and gently slide into hot oil.
  7. Cook for about 1 to 2 minutes on each side or until golden and crisp. Remove from pan and drain on paper towels.
  8. Using a fine-mesh sieve, dust maruya with the remaining sugar. Serve warm.

Notes

  • Fry the fritters until bubbles form on top and the bottom side is golden before flipping to ensure even cooking.
  • Add ground cinnamon to the sugar coating for added warmth and flavor.
