Description

These Matcha Almond Flour Brownies begin by whisking melted unsalted butter with granulated cane sugar, sea salt, vanilla extract, beaten egg, and sifted matcha green tea powder to create a smooth batter. Almond flour, all-purpose flour, and baking powder are then folded in to provide body and texture. The batter is spread into a parchment-lined loaf pan and baked at 350°F (177°C) for about 35 minutes, tested by a toothpick coming out clean or with minimal crumbs. After cooling slightly in the pan, the loaf is transferred to a rack to cool completely before slicing into eight squares and dusting with additional sifted matcha.

The result is a moist, tender brownie with a mild bitterness from matcha balanced by sweetness and a soft crumb due to almond flour. These brownies can be stored in an airtight container at room temperature for up to five days, making them suitable for prepare-ahead dessert or snacks.

  • 35 g butter melted, unsalted
  • 80 g granulated cane sugar
  • ¼ teaspoon salt sea salt
  • ½ teaspoon vanilla extract
  • 1 egg beaten, large
  • 10 g matcha green tea powder sifted + extra for dusting
  • 72 g almond flour
  • 25 g all-purpose flour
  • ½ teaspoon baking powder

Instructions

  1. Preheat oven to 350°F/177°C.
  2. Line a 8" by 4" loaf pan with parchment paper.
  3. In a medium glass bowl, whisk together melted butter, sugar, salt, vanilla, egg and matcha.
  4. Add in the almond flour, all-purpose flour, and baking powder. Fold until combined.
  5. Transfer the mixture to the prepared loaf pan.
  6. Bake at 350°F/177°C for approximately 35 minutes, or until a toothpick inserted comes out clean, or with the slightest bit of crumbs clinging to it.
  7. Remove from oven, let cool in pan for 5 minutes, and transfer to a cooling rack. Cut into 8 squares and dust with additional matcha prior to serving.
  8. Store in an airtight container for 5 days at room temperature.
