Matcha Bubble Tea

Matcha Bubble Tea combines tender tapioca pearls soaked in a muscovado brown sugar syrup with smooth, whisked matcha and milk. The chewy pearls provide a contrasting texture to the creamy drink, while the brown sugar syrup adds deep caramel notes that mellow the slight bitterness of the matcha. This beverage offers a refreshing blend of subtly sweet and earthy flavors with a cool iced finish, ideal for warm days or a unique afternoon treat.

Description

The Matcha Bubble Tea recipe begins with preparing tapioca pearls, which are simmered in a thickened muscovado sugar syrup to infuse them with rich caramel flavor. Separately, matcha powder is whisked into hot water to dissolve and create a smooth concentrated green tea base. Layers of brown sugar syrup with pearls, ice cubes, the matcha mixture, and milk are assembled in a serving cup. Stirring combines these into a creamy, chilled drink featuring the chewy texture of pearls alongside the vegetal brightness of matcha. The sugar syrup adds warmth and depth, balancing the drink's flavor profile.

This bubble tea highlights the unique earthiness of matcha combined with the soft sweetness of brown sugar pearls, offering a textural contrast thanks to the chewy boba. The beverage is chilled with ice to provide a refreshing and satisfying sip, suitable for tea lovers seeking a different kind of iced drink experience. Adjusting milk quantity can control the strength and creaminess of the matcha taste.

Ingredients

Servings

Brown Sugar Boba Pearl Syrup

  • ½ cup tapioca pearls
  • ¼ cup muscovado sugar or dark brown sugar
  • 50 ml water cold

Matcha Boba Tea

  • 2 tsp matcha powder
  • ½ cup water hot
  • 1 handful ice
  • 2-3 cups milk or non-dairy milk (less milk for a stronger matcha flavour)

Instructions

Brown Sugar Boba Pearl Syrup

  1. Prepare your tapioca pearls according to the package.
  2. In a pot, combine the muscovado sugar with 40 ml of water and bring it to a boil. Turn down the heat to a simmer and add in the prepared tapioca pearls. Simmer until the brown sugar syrup has thickened. Simmering the cooked tapioca pearls in the syrup just adds more flavour to them.
  3. Remove from heat once it has thickened.

Matcha Bubble Tea

  1. In a small bowl, whisk together the matcha powder and hot water. Set aside.
  2. In a cup, add in half of the brown sugar syrup with the pearls. Add in the ice cubes.
  3. Top with half of the whisked matcha and half of the milk.
  4. Stir to combine and enjoy!
