Mediterranean Pita Pizza with Tahini Sauce

  • 4 6- inch pites pites is plural for pita
  • 2 onion chopped
  • 2 to tomato you can try sun dried tomatoes, chopped
  • 4-6 tablespoons black olives chopped, kalamata black olives
  • 4-6 tablespoons green olives chopped, kalamata black olives
  • artichoke hearts in pieces
  • pine nuts
  • feta cheese optional

*For the Tahini Sauce*:

  • 1/4 cup tahini
  • lemon juice juice from 1 lemon
  • 2 tablespoons water
  • black pepper
  • 1 garlic minced, 1 clove

Instructions

  1. Preheat the oven at 400 F (200 C).
  2. In a small bowl mix all the ingredients for the tahini sauce.
  3. Spread 2 teaspoons tahini sauce on each pita and than add1 1/2 tablespoon chopped olives, tomato, onion and artichoke pieces.
  4. Top with 2-3 teaspoons crumbled feta and a few pine nuts.
  5. Bake in the oven for 10 minutes.
  6. Cut in quarters and serve.
