Melon Salad with Honey Yogurt Dressing

Juicy, refreshing Melon Salad with a Honey Yogurt Dressing is the perfect summertime salad. Ingredients

Servings
  • 2 cups wheat berries cooked
  • 7-8 cups honeydew melon from a 2 pounds melon, sweet, peeled, seeded, cut into cubes
  • 2.5 cups cucumber 1 large cucumber, diced
  • 1.5 cups red onion thinly sliced
  • 5 oz kale arugula or spinach also work, baby, packaged

For the Dressing

  • 1/2 cup Greek yogurt plain European style works, too, plain
  • 2 tablespoons honey
  • 1/4 cup olive oil
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon sofrito or 1 clove of garlic, minced, Brazilian style
  • 2 tablespoons cilantro minced fresh leaves
  • 1 teaspoon mint about 6 large leaves, minced fresh leaves
  • salt to taste

Instructions

  1. Add the diced melons, the cucumber, the onion slices and the cooked wheat berries to a large bowl, and set aside.
  2. Add all the dressing ingredients to a medium bowl, and whisk to combine.
  3. Dress the melon mixture with the desired amount of dressing, then toss in the baby kale.
