Mexican Chicken Marinade

Ingredients

  • 2 pounds chicken thighs boneless, skinless
  • ¼ cup extra virgin olive oil
  • 2 tablespoons honey
  • 2 tablespoons apple cider vinegar
  • 2 limes juiced
  • ½ cup cilantro chopped
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt

Instructions

  1. Prepare the marinade by combining the ingredients in a jar. Shake or stir to combine. 
  2. Add the chicken to a large bowl or bag and pour the marinade over the top. Stir to combine and coat all of the chicken. Cover and place in the refrigerator to marinate for at least 30 minutes, 2-4 hours for best flavor (over-marinating can lead to mushy chicken). 
  3. Preheat grill to 400-425 degrees F, set the entire grill to cook direct heat.
  4. Remove the chicken from the marinade, pat dry. 
  5. Rub a small amount of oil on the grill grates. 
  6. Place the chicken directly on the grill. Close the lid and cook for 6-7 minutes. Then open the grill, and flip the chicken. Close the lid and continue cooking for another 5-8 minutes until chicken registers an internal temperature of 180 degrees F (165 degrees F if cooking chicken breasts). 
  7. Remove the chicken from the grill and place on a large baking sheet. Let the chicken and rest for at least 5 minutes before serving and slicing. 

Notes

  • Chicken: swap for chicken breasts if desired. Chicken breasts should be cooked to an internal temperature of 165 degrees F.
  • Refrigerator: cooked chicken can be stored in a sealed container in the refrigerator for 4-5 days. The marinade on it's own can be stored in a sealed container for up to 3 days.
  • Freezer: The uncooked chicken with the marinade can be frozen and safely stored for up to 3 months in a freezer safe container.
  • Make Ahead Instructions: if meal prepping you can cook the chicken, portion it out and store in the refrigerator for up to 5 days.
