Mexican Rice

Mexican Rice is white rice cooked with onions and garlic in chicken broth with diced tomatoes and seasonings.

  • 2 tablespoons olive oil
  • 1 small yellow onion diced (about ½ cup
  • 1 teaspoon garlic minced
  • 1 ½ cups long-grain white rice uncooked
  • 2 cups chicken broth
  • 1 can diced tomatoes with green chilis drained
  • ½ teaspoon cumin
  • ½ teaspoon kosher salt
  • cilantro for garnish

Instructions

  1. In a large skillet, heat oil over medium heat.
  2. Add onions and cook until softened (about 5-8 minutes).
  3. Add garlic and cook 30 more seconds.
  4. Add rice, stirring often, until lightly browned (3-4 minutes)
  5. Add broth, tomatoes, cumin, and salt.
  6. Reduce heat to low, cover with a tight-fitting lid, and simmer for 15-20 minutes, or until the liquid has been absorbed.
  7. Garnish with cilantro and serve warm.
