Description
This finishing salt recipe combines the coarse texture of sea salt with the bright, sweet zest of Meyer lemons. The lemons are carefully scrubbed and zested directly onto the salt, then the zest is rubbed in to distribute the citrus oils. Spreading the mixture evenly on parchment-lined baking sheets and drying it at low oven temperature gently dehydrates the zest without cooking it, preserving the fresh lemon flavor while drying the salt for easy use.
The cooled salt is broken apart to ensure a loose texture and stored in a sealed jar to maintain freshness. This finishing salt can be sprinkled on dishes where a burst of lemon flavor is desired, adding complexity without moisture. It’s a simple way to add a citrus lift to seafood, vegetables, or salads.
Ingredients
- 1/2 cup salt I used gray, sea salt
- 2 small lemon scrubbed, Meyer variety
Instructions
- Preheat the oven to 150F.
- Line a baking sheet with parchment paper and measure salt into the middle of the paper.
- Zest the lemons directly onto the salt, then rub the zest into the salt with your finger tips.
- Spread the salt evenly around the pan and place in the oven.
- Bake for about 15 minutes until the salt feels dry and the zest looks dehydrated.
- Remove pan from oven and let cool completely. Break apart any chunks with your fingers, then transfer to a jar and seal
