Mia’s Banana Nut Bread
Description
This banana nut bread starts by mixing dry ingredients—flour, baking powder, baking soda, and cinnamon—separately. Butter and sugar are creamed until fluffy, then eggs and vanilla are added, followed by mashed ripe bananas and sour cream for moisture and tenderness. Gently folding in dry ingredients prevents toughness. Chopped walnuts can be added on top for crunch.
Baking at 350°F (180°C) in prepared loaf pans yields a bread with a soft, moist crumb and a light cinnamon-spiced flavor. The bananas provide natural sweetness and moisture, while sour cream enriches the texture.
After baking, the bread cools in the pans briefly before transferring to wire racks to cool fully, allowing for easier slicing and preventing sogginess. Leftovers can be refrigerated for up to three days or frozen for two months, thawed at room temperature.
