Microwave Brownies
Description
These brownies start by melting granulated sugar, water, and chopped dark chocolate over medium heat to form a smooth base. The mixture cools before combining with flour, cocoa powder, baking powder, salt, oil, eggs, and vanilla extract, then folding in chocolate chips. The batter is placed in a buttered microwave-safe dish and topped with extra chocolate chips.
Microwaving the batter for about 8 to 9 minutes at 1200 Watts sets the brownies, with a check at 6 minutes to avoid overcooking. The result is a fudgy, dense brownie with chocolate chips adding bursts of melted chocolate throughout.
Alternatively, these brownies can be baked in a conventional oven at 350ºF (180ºC) for 30 to 40 minutes. Egg substitution is possible by using flax eggs to accommodate dietary restrictions.

- 2/3 cup unsweetened cocoa powder 2 2/3 oz / 76 g
- 1 cup chocolate chips 6 oz / 170 g
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 4 egg
- 1 cup neutral oil flavorless, 8 fl oz / 225 ml
- 2 teaspoons vanilla extract
Notes
- Replace eggs with 4 flax eggs made from 4 tablespoons of flaxseed mixed with 1/3 cup water for an egg-free option.
- You can bake these brownies in a conventional oven at 350ºF (180ºC) for about 30 to 40 minutes instead of microwaving.
