Mincemeat Muffins

Ingredients

  • 100 g white sugar ½ cup
  • 75 g butter at room temperature ⅓ cup
  • 2 eggs
  • 175 ml milk ¾ cup
  • 2 teaspoons vanilla extract
  • 250 g all-purpose flour plain flour 1 ½ cups
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda bicarb of soda
  • ¼ teaspoon salt
  • 6 tablespoons mincemeat

Instructions

  1. Preheat the oven to 400ºF/200ºC. Line a 12-hole muffin pan with paper cases.
  2. Sift the flour, cinnamon, ginger, nutmeg, baking powder, baking soda and salt into a large bowl.
  3. In another bowl, beat the butter and sugar together until smooth, then beat in the eggs, one at a time. Beat in the milk and vanilla.
  4. Make a well in the centre of the dry ingredients, then pour in the wet ingredients and stir to combine.
  5. Gently fold in the mincemeat.
  6. Spoon into the muffin cases to ¾ full. Bake for 20-25 mins until the mincemeat muffins are risen and golden. Allow to cool on a wire rack.
