Mini Cherry Pie Bites

Mini Cherry Pie Bites are small filo shells filled with a homemade cherry filling that thickens with cornstarch. The filling cooks down until juicy and syrupy, then cools and sets inside crisp, flaky pastry shells. Topped with cream cheese whipped cream, these bite-sized pies balance tart cherry with smooth, creamy topping. They serve well as finger desserts or party treats.

Description

The Mini Cherry Pie Bites recipe starts by simmering pitted cherries to release their juice. Sugar mixed with cornstarch is added to the hot cherries, cooking until thickened to create a cherry filling thick and syrupy enough to hold shape once cooled. This filling is spooned into ready-made mini filo tart shells and allowed to cool for setting.

After cooling, each tart is topped with cream cheese whipped cream, which adds a creamy, slightly tangy contrast to the sweet and tart cherry filling. The delicate, flaky texture of the filo shells complements the soft filling and whipped topping, creating a layered textural experience in each bite.

These mini pies are ideal for serving at parties or gatherings as individual desserts. The recipe notes mention the option to substitute regular whipped cream for the cream cheese variation, which will yield a milder topping flavor.

Ingredients

Servings
  • 45 mini filo shells 3 boxes, thawed
  • 4 cups Cherry red, pitted
  • 1 cup granulated sugar
  • ¼ cup corn starch
  • 1 cream cheese used in recipe
  • 1 Whipped Cream used in recipe

Instructions

  1. Add the cherries to a saucepan and cover and cook over medium heat; heat the cherries until they release their juice and come to a simmer, 10 to 15 minutes. Stir often.
  2. In a bowl, whisk the sugar with cornstarch until smooth; pour the mixture into the hot cherries and juice, and thoroughly combine. Reduce to low heat, bring to a simmer, and cook until the filling has thickened, about 2 minutes; remove from heat.
  3. Add approximately one cherry and sauce to each of the tart shells and let cool to set.
  4. Once cooled, prepare Cream Cheese Whipped Cream and pipe onto the top of the mini pies.

Notes

  • You can use regular whipped cream instead of cream cheese whipped cream for a lighter topping flavor.
