Mini Strawberry French Toast
Description
This recipe uses baguette slices dipped quickly in an egg, milk, and salt mixture before frying in butter until golden on both sides. The mini size of the bread pieces allows for even cooking and convenient individual servings. Macerated strawberries are combined with sugar to create a lightly sweetened, syrupy topping that complements the richness of the french toast and pairs naturally with maple syrup and optional confectioners sugar dusting.
The texture is tender and custardy inside with a slight crispness on the surface from frying. The strawberries introduce bright fruity notes that balance the toast’s buttery flavor. Maple syrup adds classic sweetness, making this dish suitable for leisurely breakfasts and brunches.
The topping syrup created by macerating the strawberries intensifies their flavor and moistens each bite. Additional fresh strawberries can be used to enhance presentation or flavor as desired.
Ingredients
- 1 cup strawberries sliced
- 2 tsp sugar (white)
- 2 egg
- 2 tbsp milk (full or low fat)
- Pinch salt
- 1 - 2 tbsp butter more = yummier, unsalted
- 10 lices baguette french stick), around 2 1/5" / 3cm thick
To Serve
- maple syrup (not optional!)
- confectioners sugar (icing sugar), for dusting (optional)
- strawberry optional, extra
Instructions
- Combine the sugar and strawberries in a bowl and set aside to macerate (it sweats to form a bit of syrup).
- Lightly whisk the eggs, milk and salt in a shallow bowl.
- Melt butter in a large fry pan over medium high heat.
- Dip each side of the bread slices into the egg, 3 seconds on each side. Place in the pan and fry each side for 2 1/2 minutes, until it is nicely browned.
- Remove from the fry pan, and serve, topped with the strawberries (use the syrup created), maple syrup and confectioners sugar (icing sugar), if using.
Notes
