Mini Witch Cheesecakes

These adorable Mini Witch Cheesecakes is a fun Halloween recipe that is going to make your next Halloween party so much fun!

Ingredients
Cheesecake Filling
- 16 oz. cream cheese ,softened
- 1 c sugar
- 3 eggs
- 2 Tbsp flour
- 1½ tsp vanilla
- 16 drops Purple Food Coloring
Crust
- 2 c chocolate sandwich cookies ,crushed
- 2 Tbsp butter , melted
Decorations
- 1 box Welch's Fruit Rolls, Berry
- 16 Chocolate striped cookies
- 16 star sprinkles
- 32 edible eyes
- 1/2 c chocolate , melted
Instructions
- Preheat oven to 350°F
- Melt butter and add crushed cookies
- Form the cookie mixture into 1 inch balls and place them in your mini cheesecake pan.
- Use tamper to firmly press the ball in to the bottom of the pan.
- In bowl beat cream cheese, sugar, eggs, and vanilla until thoroughly mixed.
- Add flour slowly, mixing it in completely.
- Add food coloring until you reach desired color.
- Pour cheesecake mixture over crusts, filling each tin almost to the top.
- Bake for 15 minutes.
- Let cool completely.
Decorations
- To create the witch's hat unroll a Welch's Fruit roll and cut 3 4-6 inch strips.
- Lay the fruit rolls side-by-side slightly overlapping.
- Roll the fruit rolls up into a cone shape.
- Use a small strip of fruit roll to place around the bottom of the hat like a hat band and add a star or any other sprinkle decoration you'd like.
- Place Welch's Fruit Roll cone on top of cookie
- Place cookie hats on top of mini cheesecakes.
- Add eyes to cheesecakes and use melted chocolate to draw a smile on.
