Molasses Sugar Cookies

Molasses Sugar Cookies are soft, chewy cookies that balance rich molasses sweetness with warm spices like cinnamon, ginger, and cloves. The dough chills before baking to help shape the cookies and control spread. After rolling in sugar and baking at a moderate temperature, cookies develop characteristic cracks and a slightly crisp exterior with a tender center. These cookies hold their shape well and offer a cozy spice profile ideal for holiday baking or year-round treats.

Description

Molasses Sugar Cookies combine shortening and sugar creamed until airy, then incorporate eggs and dark, flavorful molasses for moisture and depth. The dry mix of flour, baking soda, salt, and spices is gradually added to the wet ingredients, creating a dough that is chilled for at least one hour to firm up and develop flavor. Chilled dough is rolled into one-inch balls and coated thoroughly in granulated sugar before baking.

Baking at 375°F for about 10 minutes results in cookies that spread modestly and crack as they cool. The surface becomes slightly crisp while the interior remains soft, allowing for a chewy texture typical of molasses cookies. Spices of cinnamon, ginger, and cloves provide warm notes without overpowering the sweet molasses taste.

These cookies suit festive occasions or everyday enjoyment and pair well with milk or tea. The dough handles substitutions like butter for shortening, though the texture may be less soft.
