  • 1 cup Butter, cold cut into small cubes
  • 1 3/4 cup sugar
  • 2 egg
  • 2 teaspoon vanilla
  • 1/2 cup cocoa powder high quality
  • 2 1/4 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chocolate chunks
  • 2 - 3.5- ounce peppermint bark cut into chunks (may want more depending on preference), Ghirardelli or Hershey’s, or white chocolate candy cane bar, bars
  • 3 candy canes crushed

Instructions

  1. Preheat oven to 360 degrees.
  2. In a large mixing bowl, cream cold butter cubes and sugar for at least 4 minutes, scraping the bowl halfway through mixing.
  3. Add eggs one at a time, mixing well after each addition. Add in vanilla.
  4. Stir in flour, cocoa, baking powder, and salt. Stir in chocolate chips.
  5. Drop large spoonfuls onto cookie sheet lined with a Silpat or parchment paper.
  6. Place chunks of the peppermint bark bar throughout cookie dough.
  7. Cook for 10-14 minutes.
  8. Sprinkle with crushed candy canes.
