Mrs. Claus Chocolate Peppermint Cookies
Description
The cookies start by creaming cold butter cubes and sugar until light, then incorporate eggs and vanilla. Cocoa powder, flour, baking powder, and salt create the chocolate base, with chocolate chunks stirred in for texture. Peppermint bark pieces are combined within the dough, and crushed candy canes are sprinkled on top before baking.
Baked at 360°F, the cookies become tender and moist on the inside, with a chocolate and mint flavor profile enhanced by the peppermint pieces on top. This combination creates a holiday-inspired treat with a balance of sweetness and cooling peppermint.
This recipe requires no cooling of dough before baking, and careful incorporation of peppermint bark chunks ensures bites with distinct mint candy. The crushed candy cane topping adds a decorative and textural element.
