  • teaspoons olive oil
  • 8 ounces portobello mushrooms diced
  • 1 shallot minced
  • 1 teaspoon thyme chopped, fresh
  • tablespoons flour
  • 12 ounces Brie cheese rind removed and cut into cubes
  • 2 ounces blue cheese crumbled
  • 2 ounces swiss cheese cubed
  • 1 cup white wine dry
  • black pepper freshly-ground, to taste
  • 1 baguette cut into slices
