This mushroom pizza recipe is what gourmet pizza stands for. It’s perfectly flavored, thin, rustic and light. A mix of cream cheese, mozzarella, and brie makes for the perfect creaminess to balance the bitterness of brie.

Ingredients
- 1 batch no knead pizza dough
- 1 tablespoon olive oil
- 3 cloves garlic
- 1 cup cremini mushrooms sliced
- 1 onion sliced
- 1 pinch red pepper flakes (optional, but recommended)
- 1 pinch salt
- 3/4 cup mozzarella cheese grated
- 1 cups Brie cheese cut up into 1 inch square pieces
White Pizza Sauce
- 1/3 cup cream cheese flavored or plain
- 1/8 teaspoon salt
- 2-3 Tablespoons heavy cream or half n half
Notes
- For the perfect crust, preheat your oven to the highest setting, and place a pizza stone or a rimless baking sheet or an inverted baking sheet on the middle rack of your oven. - If you want a richer white sauce, add extra cream cheese or heavy cream to the sauteed mushroom and kale.
