Ingredients
- 6 large white potatoes
- 360 ml Instant Pot Vegetable Stock
- 2 Tsp Duck Fat/Goose Fat
- 1 Tsp thyme
- 1 Tsp rosemary
- salt & pepper
- extra virgin olive oil spray

Instructions
- Add your vegetable stock to the bottom of your Ninja Foodi cooking pot and peel and dice your potatoes into roast potatoes.
- Load the potatoes into the air fryer basket and load the air fryer basket into the Ninja Foodi. Season well with salt and pepper.
- Place the lid on the Ninja Foodi set the valve to sealing and pressure cook for 0 minutes. Do a quick pressure release and remove the liquid from below the air fryer basket.
- Add seasoning and duck fat to the potatoes and mix with a silicone spatula as it will be too hot for your hands.
- Place the air fryer lid down on the Ninja Foodi and cook for 20 minutes at 200c/400f. Halfway through shake the roast potatoes (for an even cook) and if they are not getting crispy fast enough add some extra virgin olive oil spray.
Notes
- Freezer. These roast potatoes are freezer friendly. Load into Ziploc bags and freeze once cool.
- Basket. I recommend you use the air fryer basket, that way you don’t have two accessories to clean and its perfect for pressure cooking with as well as air frying.
- Stock. If you need gravy, then I recommend you save the stock to go towards a gravy.
