Description
No Bake Cookies start by melting coconut oil and mixing it with maple syrup, milk, unsweetened cocoa powder, creamy peanut butter, and vanilla extract in a saucepan, brought to a brief boil while stirring. Rolled oats are stirred in off heat, and the mixture is portioned onto parchment-lined trays using a cookie scoop. After chilling for at least 30 minutes, the cookies firm up into a chewy, chocolate-peanut buttery snack.
The combination yields a moist texture with the chewiness of whole oats and the richness of peanut butter and cocoa. These cookies are convenient since they do not require an oven and chill quickly.
Adding a pinch of salt helps balance flavor, especially if the peanut butter used is unsalted.
Ingredients
- ¼ cup coconut oil
- ½ cup maple syrup
- ¼ cup milk
- 2 tablespoons cocoa powder unsweetened
- ¼ cup peanut butter creamy, plus 2 tablespoons
- ½ teaspoon vanilla extract
- 1½ cups rolled oats whole
Instructions
- Line a large baking sheet with parchment paper.
- In a medium saucepan, melt the coconut oil over medium heat. Add the maple syrup, almond milk, cocoa, peanut butter, and vanilla and whisk to combine. Bring to a boil for 2 minutes, stirring often.
- Remove from the heat and stir in the oats. Use a 2-tablespoon cookie scoop to scoop the batter onto the prepared baking sheet. Chill for 30 minutes or until firm.
Notes
- If using unsalted peanut butter, add a few pinches of salt to the chocolate mixture to enhance flavor.
