These No-Bake Cool Mint Cookie Chews are so delicious and easy to make. They taste like a Thin Mint chewy treat and they're a great recipe to make with kids.

Ingredients
- 1 pkg 15.25 oz Cool Mint Oreos
- 4 tbsp butter
- 5 c mini marshmallows
- 1 tsp vanilla
Instructions
- place Cool Mint Oreos in a plastic bag and crush with a kitchen mallet or rolling pin and set aside
- melt butter in a large pot over med heat
- stir in the marshmallows and continue to stir until melted and smooth
- remove from heat and mix in vanilla, then crushed Oreos
- stir until cookies are completely coated in marshmallow
- pour into a greased 8 x 8 pan in an even layer
- allow to cool then cut into 9 squares
