No Bake Lasagna Recipe

If you can boil pasta, you can make this easy no-bake lasagna recipe real quick!

Ingredients
- 8 lasagna noodles broken in half
- 2 cups marinara sauce
- 3 ounces baby spinach (about ½ of a 5oz bag) chopped
- 1 ¼ cups ricotta cheese
- ½ cup grated Parmesan cheese more for serving
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano or italian seasoning
- ½ cup shredded Mozzarella cheese
Instructions
Boil the pasta:
- Fill a large pot with water and bring it to a boil. Cook the lasagna noodles according to the package directions. Drain the water and place the noodles in a colander for a few minutes.
Warm up the sauce:
- Pour the marinara sauce and the spinach into the pot. Heat over medium heat, until the sauce is warm and the spinach begins to wilt. Add the lasagna noodles once warm, stir to combine and turn off the heat.
Combine the cheesy filling:
- In a medium, microwave-safe bowl, use a fork to combine the ricotta, Parmesan cheese, garlic powder, onion powder, and dried oregano or Italian seasoning. Warm it in the microwave for approximately 2 minutes, stopping after a minute to stir the mixture.
Assemble the lasagna bowls:
- Divide the lasagna noodles into 4 bowls, leaving some of the warm marinara sauce in the pot. Top each bowl with ¼ of the cheesy mixture, and spoon the sauce left in the pot over each of the bowls, on top of the cheesy mixture. Sprinkle the shredded mozzarella on top of the bowls, and additional parmesan cheese if desired.
Notes
- If you have picky eaters, you can leave the spinach to the side or omit it altogether.
