Wow your friends and family with this impressive No Churn Galaxy Ice Cream (Mixed Berry Lemon Ice Cream)! It's made with fresh fruits and absolutely NO food coloring. A delicious and magical summer recipe for kids!EASY - This recipe is easy to make. Since it is a no churn ice cream recipe, it will be easy to assemble. There are four flavor / color components to the recipe. There is an overnight chilling step to set the ice cream.

Ingredients
Vanilla Ice Cream Base
- 800 g condensed milk 2 cans
- 960 mL chilled whipping cream 4 cups
- 1 tbsp vanilla extract
Flavoring
Pink
- ¼ cup seedless raspberry puree strained puree from about 4 - 5 oz of raspberries
Purple
- ¼ cup seedless blackberry puree strained puree from about 4 - 5 oz of blackberries
Black
- 2 tbsp activated coconut charcoal
- 60 mL fresh lemon juice 4 tbsp
Blue
- 6 dried butterfly pea flowers
- ½ cup water
- 2 tbsp sugar
Charcoal Chocolate Magic Shell
- 300 g semisweet chocolate 10.5 oz chips or bar chocolate
- 115 g coconut oil 4 oz (weight)
- 2 tbsp activated charcoal powder
- Pinch of salt
Instructions
Flavoring
Blue
- Place the flowers, sugar and water in a saucepan. Heat over medium heat and bring the water to a boil. Stir to dissolve the sugar. Reduce the heat and let the mixture reduce by half to get ¼ cup of deep blue butterfly pea extract. This will take about 15 - 30 minutes (depending on your stove).
- Let the extract cool down to room temperature and strain to remove the flowers. Using a spoon, squeeze out any remaining liquid from the steeped flowers. Store in a bottle until needed.
Black
- Mix the activated charcoal with the lemon juice and set aside.
Pink and Purple
- Keep the purees in the fridge until needed.
Vanilla Ice Cream Base
- In a large bowl, place the chilled whipping cream and vanilla and whisk until you get soft peaks. This will be easier with a hand mixer or a stand mixer.
- Add the condensed milk and mix until it has fully incorporated.
- Divide the mix into four portions. Add the flavorings (Pink, Purple, Black and Blue) to each of the apportioned vanilla base.
Galaxy Ice Cream Assembly
- Using a spoon, scoop in the portions of the ice cream base into a 6 cup capacity dish. Make sure to dollop the flavors randomly to get a good mixture of all the colors. Be careful not to over-mix, because the blue base (butterfly pea) may change color if mixed too much with the other flavors.
- Smoothen the surface and freeze for at least 8 hours to let it completely harden.
- Once hardened, scoop ice cream into a bowl or ice cream cone.
- You can serve as is or drizzle some magic shell sauce on top.
Charcoal Chocolate Magic Shell
- Place the chocolate, coconut oil and salt in a heat-proof bowl. Microwave in 20 second bursts (while stirring in between), until the coconut oil and chocolate have completely dissolved.
- Stir in the activated charcoal at the end until it has completely mixed through. Alternatively, you can also use black food coloring, or leave it out.
- Let it cool down slightly before using it on the ice cream.
For a Party
- Dip the ice cream cone tips in melted chocolate and let them set.
- Scoop the ice cream on to chocolate dipped ice cream cones and let the ice cream harden in the freezer. Dip the frozen ice cream in the chocolate magic shell sauce (just the ice cream this time), and sprinkle silver or colored edible stars and pearls on top before the sauce sets (or drizzle a little extra just for the sprinkles - see recipe video).
- Once the magic shell has set, wrap the ice cream in plastic wrap or in freezer bags and store in the freezer for up to 2 - 3 days. Enjoy!
Notes
- Wash the berries (raspberries and black berries separately) first. Then place them in a small blender and blend until smooth.
- Pass the berry mixture through a fine sieve to remove the seeds. Measure out the amount of berry puree you require for the recipe and chill until needed.
