Oatmeal Chocolate Chip Sunbutter Cookies

These Oatmeal Chocolate Chip Sunbutter Cookies combine creamy sunbutter, warm spices, oats, and chocolate chips to create soft cookies that firm up as they cool. The dough is mixed until smooth and scooped to retain a tender, slightly chewy texture. Baked for just 10–11 minutes, the cookies balance natural sweetness and a gentle nutty flavor from the sunbutter.

Description

The recipe mixes oil, maple syrup, sunbutter, vanilla, lemon juice, salt, and optional cinnamon into a smooth base. Adding oats, flour, and baking soda creates a dough with body, while folding in chocolate chips adds pockets of melted sweetness once baked. Baking at 350°F for a short time yields cookies that are soft when hot but set firmly as they cool.

The cookies feature a chewy oat texture complemented by the rich nutty flavor of sunbutter and the contrast of semi-sweet chocolate chips. Their soft interior and mild sweetness make them appealing as a snack or dessert.

These cookies should be stored covered at room temperature to maintain freshness, and their quick bake time accommodates batch baking without long preparation.
