Description

Orange Cardamom Buns feature a dough enriched with melted butter, lukewarm milk, and maple syrup, balanced with bread flour and dry yeast. Ground cardamom and orange zest add distinctive spice and citrus notes, infusing the buns with aroma. After mixing and kneading, the dough rests to rise until doubled in size, then is portioned into 16 equal buns for a second rise. Each bun is glazed with beaten egg before baking at 200°C (fan assisted 180°C) to develop a golden, slightly crisp crust. The texture inside is soft and pillowy, with subtle sweetness and fragrant spice from the cardamom and orange zest.

Ingredients

  • 25 g butter melted, salted
  • 350 ml milk lukewarm
  • 2 tbsp maple syrup
  • 525 g bread flour strong, sifted
  • 3 tsp dried yeast easy bake
  • 1 tbsp caster sugar
  • 0.75 tsp ground cardamom
  • 1 tsp orange zest
  • 0.75 tsp salt
  • 1 egg beaten

Instructions

  1. Mix the butter, milk and maple syrup together in a jug.
  2. In a large mixing bowl combine the flour, yeast, sugar, cardamom, orange zest and salt together.
  3. Make a hole in the dry ingredients and pour in the liquid.
  4. Mix until a dough has formed.
  5. Transfer the dough onto a floured surface and knead for 5 mins.
  6. Place the dough back in the bowl, cover and let rise in a warm place until it has doubled in size (45 mins - 1hr).
  7. Then tip the dough back onto the floured surface, knead it again and then shape it into 16 buns.
  8. Transfer the shaped buns unto a lined baking tray, cover and let rise for 25 mins.
  9. Preheat the oven to fan assisted 180C / 200C / 400F / Gas 6.
  10. Glaze each bun with the egg and bake for 20-22 mins until done.
