Orange Self Saucing Pudding
Description
Orange Self Saucing Pudding is made by mixing self-raising flour, light brown sugar, and freshly grated orange zest to provide citrus aroma and sweetness. A wet batter of milk, eggs, melted butter, and vanilla is combined with the dry ingredients and divided into ramekins or a casserole dish.
Before baking, a sauce layer is prepared by sprinkling caster sugar mixed with cornflour over the batter. A combination of freshly squeezed orange juice with boiling water is gently poured over the top. During baking at 180°C, the mixture sets so that a golden pudding forms above with a bright, slightly thickened orange sauce beneath.
The finished dessert has a soft, light texture with refreshing orange flavor throughout. Serving it with whipped cream or vanilla bean ice cream balances the tangy sauce and adds richness to the dish.
Ingredients
PUDDING:
- 1 ¼ cups self-raising flour sifted
- ½ cup light brown sugar
- 2 teaspoons vanilla extract
- orange finely grated zest of 2
- ½ cup milk
- 1 egg
- 50 g butter melted
SAUCE:
- 1 ½ cups orange juice freshly squeezed
- ½ cup water boiling
- ½ cup caster sugar
- 2 teaspoons cornflour
Instructions
- Preheat the oven to 180 degrees Celsius (355 Fahrenheit) and grease 6 individual ramekins with butter or 1 large casserole dish.
- Sift the flour into a large bowl and add the brown sugar, orange zest and stir to combine.
- In a jug combine the milk, egg and melted butter and mix to combine. Add to the flour mixture and stir until combined before dividing between the ramekins.
- To make the sauce, combine the caster sugar and cornflour and sprinkle on top of the puddings. Combine the orange juice and boiling water and gently pour over the top of the puddings before placing in the oven. Bake for 20 to 25 minutes, or until the pudding is golden.
- Serve with whipped cream or vanilla bean ice cream.
