Ingredients

Servings
  • 1 ½ C unsalted butter softened
  • 1 ½ C light brown sugar
  • ½ C sugar
  • 2 large eggs
  • 2 egg yolks
  • 4 tsp pure vanilla extract
  • 1 ½ tsp baking soda
  • 1 tsp kosher salt
  • 2 ½ C flour
  • 2 C semi-sweet chocolate chips
  • 2 C chopped Oreos
  • 1 C Rainbow sprinkles
  • 1 - 10 in round cake board

Chocolate Ganache

  • 1 C semi-sweet chocolate chips
  • ½ C heavy whipping cream
  • 1 ½ C chopped Oreos small pieces
  • 1 C mini chocolate chips
  • 1 C Rainbow sprinkles

Vanilla Frosting

  • ½ C unsalted butter softened
  • 2 C powdered sugar
  • 3 tbsp heavy whipping cream
  • 1 tbsp pure vanilla extract
  • ½ C Rainbow sprinkles
  • 1 travel-size container of mini Oreos
  • 2 regular size Oreos 1 extra in case you eat one

Instructions

Chocolate Ganache directions :

  1. Using a small pot, bring the heavy whipping cream to a simmer
  2. Using a medium heat-safe bowl, combine the 1 C chocolate chips and the hot heavy whipping cream
  3. Allow sitting for 1 minute before whisking until smooth
  4. Set aside

Chocolate chip oreo cookie directions

  1. Preheat oven to 350 degrees and spray a 9in a round cake pan with pam baking spray, set aside
  2. Using a large bowl, whisk together the flour, baking soda, and salt
  3. Using a large bowl, beat the butter, sugar, and brown sugar until light and fluffy
  4. Beat in the eggs and vanilla until combined
  5. Gradually beat in the dry ingredients until combined and a dough forms
  6. Fold in 1 ½ C chocolate chips, 1 ½ C chopped Oreos, and ¾ C rainbow sprinkles
  7. Press the cookie dough into the cake pan
  8. Sprinkle the remaining chocolate chips, chopped Oreos, and rainbow sprinkles on top
  9. Bake in the oven for 25-30 minutes or until the edges are set and start to turn a light golden brown
  10. Remove from oven and allow to cool completely

Vanilla frosting directions :

  1. Using a standing mixer, beat the butter, powdered sugar, heavy whipping cream, and vanilla until combined
  2. Scoop the frosting into the piping bag and set it aside

Decorating the cookie cake directions :

  1. Remove the cookie cake from the pan and place it onto the cake board
  2. Heat the chocolate ganache in the microwave for 30 seconds to re-melt the chocolate
  3. Pour the ganache onto the top of the cookie and smooth evenly
  4. Sprinkle the mini chocolate chips, chopped Oreos, and the rainbow sprinkles on top
  5. Allow the ganache to firm up before piping the frosting
  6. Once the ganache has firmed up, pipe dollops of frosting around the edge of the cookie cake
  7. Sprinkle rainbow sprinkles around the edge and place a mini oreo onto the frosting
  8. Place a big oreo in the center of the cookie cake
  9. Cut into slices and serve with a BIG OLE GLASS OF MILK
  10. Enjoy!
