  • 1 pound chicken breasts
  • 2 cup Panko bread crumbs
  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon chopped parsley

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly coat it with cooking spray.
  2. In a shallow bowl, combine panko bread crumbs, chopped parsley, salt, and black pepper. In another bowl beat the egg.
  3. Dip the chicken into the beaten eggs, allowing any excess to drip off. Then, press the chicken into the panko mixture, coating both sides thoroughly.
  4. Place the coated chicken breasts on the prepared baking sheet. Lightly spray the top of the chicken with cooking spray.
  5. Bake in the preheated oven for 15-20 minutes or until the chicken is cooked through and the coating is golden brown and crispy.
