Parmesan Prosciutto Scones

These parmesan prosciutto scones are packed full shredded parmesan, prosciutto, chives and lots of delicious butter. They are perfect for Christmas morning!

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 teaspoons sugar
  • 4 tablespoons unsalted cold butter cut into cubes
  • 1 cup shredded Parmesan cheese more for topping
  • 1 cup chopped prosciutto sliced 1/4 inch thick
  • 1/4 cup diced chives
  • 3/4 cup - 1 cup heavy cream more for topping

Instructions

  1. Preheat oven to 425 degrees and line a baking sheet with a Silpat liner or parchment paper.
  2. In a large mixing bowl add flour, baking powder, and sugar. Whisk to combine.
  3. Add cold butter to the flour mixture and using a pastry blender mix into the flour until the flour is crumbly with little pieces of butter still present in the dough.
  4. Stir in Parmesan cheese, prosciutto, and chives.
  5. Add in 3/4 cup heavy cream and stir to combine.
  6. If the mixture doesn't fully come together add in a bit more cream until the dough fully comes together and is a bit sticky.
  7. Flour a large cutting board or your counter and turn out the dough.
  8. Flour your hands and form the dough into a 6-inch disk and about 3/4 inch thick.
  9. Cut into 8 pieces and place onto the prepared baking sheet.
  10. Brush the tops of the scones with additional heavy cream.
  11. Place into the oven and cook for 20-25 minutes or until golden brown.
  12. After 15 minutes remove from the oven, top with a small handful of shredded Parmesan cheese, and add back to the oven.
  13. Continue baking until completely baked.
  14. Serve warm with lots of delicious butter.
