Pasta Primavera Recipe

Ingredients

  • 1 pound pasta any kind you like
  • 3 tablespoons butter salted or unsalted
  • ½ cup onion diced, yellow or white
  • ¾ cup tomato diced
  • ½ cup pepper yellow, red, or orange
  • ¾ cup asparagus
  • ¾ cup peas frozen
  • 3 cloves garlic minced
  • ¼ cup white wine or broth (chicken or vegetable)
  • 1 cup chicken broth or vegetable broth
  • ¼ cup heavy cream
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ¾ cup Parmesan Cheese shaved or grated
  • 1 tablespoon basil fresh, chopped, optional
  • 1 tablespoon parsley fresh, chopped, optional

Instructions

  1. Bring pasta water to a boil, add pasta and cook until al dente while you prepare the vegetables and sauce. 
  2. In a large saucepan, heat butter on medium heat until melted. 
  3. Add onions and saute until slightly softened about 4 minutes. 
  4. Add the peppers and tomatoes. Saute until slightly softened about more 3 minutes.
  5. Add the garlic, peas, asparagus, salt and pepper.
  6. Turn heat to medium-high and add white wine, scraping up any brown bits on the bottom of the pan. Cook until the wine is reduced and almost all gone about 3 minutes.
  7. Add the chicken broth and cream and simmer 6-8 minutes, until reduced and thickened. 
  8. Add the pasta and toss to combine with the sauce and vegetables. 
  9. Top with grated or shaved parmesan and chopped fresh parsley and basil (optional). 

Notes

  • Any kind of pasta can be used in this recipe. 
  • You can also substitute out any of these vegetables and use what you have! This is a recipe that is easy to customize to your preference.
