Peanut Butter Swirl Brownies for Two

Peanut Butter Swirl Brownies for Two feature a rich chocolate batter baked in a loaf pan with swirled peanut butter topping. The batter includes cocoa powder, sugar, butter, egg, and a touch of vanilla, creating a dense but tender chocolate base. A peanut butter mixture with powdered sugar, butter, vanilla, and salt is spooned over the batter and swirled for marbling. This recipe is portioned to serve two, providing a moist, fudgy brownie accented by creamy, sweet peanut butter ribbons.

Description

This recipe produces a small batch of chocolate brownies using melted butter, granulated sugar, cocoa powder, and flour combined with egg and vanilla. The batter is spread into a greased and parchment-lined loaf pan for ease of removal after baking. The peanut butter swirl is made by mixing smooth peanut butter with melted butter, powdered sugar, vanilla, and a pinch of salt to balance sweetness and enhance flavor.

After placing dollops of the peanut butter mixture on top of the brownie batter, a knife is used to create horizontal swirls and an S-pattern, incorporating the peanut butter throughout the top layer. Baking at 350°F yields brownies that are set around the edges and slightly moist in the center. Cooling on a rack allows the brownies to firm up before slicing.

The result is a dense yet tender brownie with a deep chocolate flavor accented by creamy peanut butter swirls, offering a balanced combination of richness and sweetness ideal for small servings or sharing.

Ingredients

Servings

Tools

  • 9x5-inch loaf pan
  • parchment paper

Brownies

  • 1/4 cup butter melted and slightly cooled, unsalted, 2 oz
  • 1/2 cup granulated sugar 100g
  • 1 egg large
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons unsweetened cocoa powder sifted if lumpy, 15g
  • 1/4 cup all-purpose flour 30g
  • 1/8 teaspoon baking powder
  • 1/8 teaspoon salt

Peanut Butter Swirl

  • 1 tablespoon butter melted, unsalted, 0.5oz
  • 2 tablespoons powdered sugar 15g
  • 3 tablespoons peanut butter smooth
  • 1/8 teaspoon vanilla extract
  • salt pinch

Instructions

Brownies

  1. Preheat your oven to 350°F. Grease a 9x5-inch loaf pan and line with parchment paper.
  2. In a medium bowl, combine sugar, cooled butter (if it's too hot, it will scramble your egg), egg, and vanilla. Whisk until well-combined.
  3. To the same bowl, add flour, cocoa powder, baking powder, and salt. Stir until just combined.
  4. Transfer mixture to your prepared pan and use a knife to spread the batter so that it mostly covers the bottom of the pan.

Peanut Butter Swirl

  1. In a small bowl, whisk together peanut butter, melted butter, powdered sugar, vanilla, and salt until well-mixed. Drop the peanut butter mixture by the spoonful over the brownie batter.
  2. Use a knife to swirl in the peanut butter by drawing 3 horizontal lines down the long side and then making an "S" shape across them.
  3. Bake for 22 to 25 minutes, until a toothpick inserted into a non-peanut butter section near the middle comes out with just a few crumbs.
  4. Place brownie pan on a cooling rack and cool for at least 15 minutes before removing the brownies. Slice and enjoy!
