These peanut noodles are a quick and easy meal that is sure to please everyone at the table! The spicy, creamy peanut sauce comes together in minutes while the noodles cook, making it a hassle-free dish that you can whip up any night of the week!

Ingredients
- 8 oz brown rice noodles
- ½ cup creamy unsalted peanut butter
- 3 tbsp Coconut aminos
- 2 tbsp rice vinegar
- 2 tbsp toasted sesame oil
- 1 tbsp honey or maple syrup for a vegan option
- 1 tbsp freshly squeezed lime juice
- 2 cloves garlic minced
- 1 tsp grated ginger
- ¼ tsp red pepper flakes optional, for added heat
- ¼ cup warm water more as needed
- chopped green onions
- sesame seeds for garnish
Instructions
- First, cook the brown rice noodles according to the package instructions until al dente. Drain and rinse them under cold water to stop the cooking process. Set them aside.
- In a medium-sized bowl, whisk together the peanut butter, coconut aminos, rice vinegar, toasted sesame oil, honey, lime juice, minced garlic, grated ginger, and red pepper flakes (if using).
- Gradually add warm water to the sauce, whisking continuously, until you achieve a smooth and creamy consistency. You may need to add more water if the sauce is too thick. Set the sauce aside.
- In a large mixing bowl, combine the cooked rice noodles with the peanut sauce. Toss and stir gently until the noodles are well coated with the sauce.
- If desired, garnish with chopped green onions, sesame seeds, chopped peanuts, and cilantro.
- Serve the peanut noodles immediately at room temperature, or refrigerate for a few hours to serve chilled. The flavors will develop more if you let the noodles sit for a while.
