Description
This recipe starts by dissolving sugar, corn syrup, salt, and water together and bringing the mixture to a boil over medium heat. Once combined, chopped pecans are stirred in and the temperature is carefully monitored with a candy thermometer until it reaches 300°F, the hard crack stage. This precise temperature ensures the brittle will set with a crisp snap.
After reaching temperature, the mixture is removed from heat and butter, vanilla extract, ground cinnamon, and baking soda are stirred in rapidly. The baking soda creates tiny air bubbles, lightening the texture of the brittle. The hot mixture is then poured onto a prepared baking sheet and spread into a roughly rectangular shape. It cools completely at room temperature before being broken into pieces for serving or storage.
The brittle can be stored in an airtight container at room temperature to maintain its crispness. The combination of the caramelized sugar with pecans and subtle cinnamon provides a balanced nutty, sweet candy that is traditional and satisfying.
Ingredients
- 1 cup granulated sugar
- ½ cup light corn syrup
- ¼ teaspoon salt
- ¼ cup water
- 1 cup pecan halves chopped
- 2 tablespoons butter softened, salted
- 1 teaspoon vanilla extract pure
- ¼ teaspoon ground cinnamon optional
- 1 teaspoon baking soda
Instructions
- Line a large baking sheet with a silicone baking mat or parchment paper. Set aside.
- In a heavy 2 quart saucepan, over medium heat, bring to a boil sugar, corn syrup, salt, and water. Stir until sugar is dissolved.
- Add in pecans, stirring until combined.
- Place a candy thermometer into the mixture and continue cooking. Stir frequently until temperature reaches 300°F.
- Immediately remove saucepan from heat and quickly stir in butter, vanilla, cinnamon, and baking soda.
- Immediately pour onto prepared baking sheet. Using a rubber spatula, spread the mixture into rectangle about 14x12 inches.
- Cool completely.
- Snap candy into pieces and store in an airtight container at room temperature.
