Penne alla Vodka

Easy homemade Penne alla Vodka made at home for an easy dinner! Penne pasta tossed in a homemade creamy red sauce.

Ingredients

  • 16 ounces penne pasta
  • 8 cups water
  • 1 teaspoon oil
  • 19 ounces tomato basil soup 1 jar
  • 1 ¼ cups vodka
  • 1 cup heavy cream
  • ¾ cup grated Parmesan cheese
  • Parmesan Cheese optional garnish
  • fresh chopped basil, optional garnish

Instructions

  1. Place the penne pasta, water, and oil in a large saucepan and bring to a boil over medium-high heat.
  2. Boil for 10-12 minutes or until al dente, not hard but still with a bite to it.
  3. Strain the noodles in a large strainer and set them to the side.
  4. While the noodles are cooking, combine the soup and vodka in a large saucepan.
  5. Heat over medium-high heat until boiling, stirring frequently.
  6. When the mixture comes to a boil, reduce heat to low and simmer for 10-15 minutes or until thickened and no longer smells of alcohol.
  7. Stir in the heavy cream and parmesan cheese and cook for another 1-3 minutes, or until the cheese is melted and the sauce is thick and hot, stirring constantly.
  8. Gently toss together the cooked penne and sauce until combined, and serve hot with parmesan cheese and chopped basil, optional.

Notes

  • FRIDGE: Store leftovers in an airtight container for 3-5 days.
  • FREEZER: To store it in the freezer, place leftovers in an airtight container and store it in the freezer for 1-2 months.
  • If your sauce is too thick, add a little heavy cream until it thins out. However, if it’s too thin, there are a few ways to thicken it up. Make a slurry out of 1 tablespoon of cornstarch and one tablespoon of cold water. Slowly pour it into the sauce and then bring to a boil for one minute. It should thicken the sauce right up!
