Penne Pasta with Salmon and Vodka

Ingredients
- 400 grams penne pasta ((14 ounces))
- 35 grams scallion ((1.25 ounces))
- 150 grams tomatoes ((1 third of a pound))
- 2 grams chives
- 200 grams smoked salmon (( 7 ounces))
- 40 grams vodka ((1.5 ounces fl))
- 200 grams half and half ((7 ounces fl))
- 40 grams extra virgin olive oil ((1.5 ounces fl))
- 1 tbsp salt
- 1 tbsp pepper

Instructions
- First, prepare all of the ingredients! Cut the tomatoes into fourths, mince the shallots and the chives (separately), chop the salmon into strips.
- Heat up a large frying pan on medium heat and drizzle in a decent amount of olive oil. Once the pan is hot enough, add the shallots and cook for 1-2 minutes.
- Add in the chopped salmon and let it fry up for a couple minutes. Then, slowly pour in the vodka and let that cook until most of the vodka has cooked off.
- Now, add the tomatoes and chives in. Let those cook for 1-2 minutes, then add in the half-n-half, salt, and pepper. Turn the heat down to low and let this simmer while you make the penne pasta.
- Once the penne is ready, drain and add the pasta straight to the frying pan. Turn the heat off and make sure to thoroughly coat the penne in sauce.
- Serve it up and pair with a crisp white wine for the perfect dinner!
