Ingredients
- 3 cups all-purpose flour
- 3 teaspoons baking powder
- 4 large eggs
- 1/2 teaspoon salt
- 1 cup white sugar
- 1/2 cup vegetable oil or melted butter
- 1 teaspoon vanilla natural extract, or scrape one pod
- 3/4 cup pineapple juice
- 1/2 cup crushed canned pineapple
- 1 cup chopped macadamia nuts
Instructions
- Preheat oven to 350º F (175ºC), and lightly grease and flour a 9 x 5-inch loaf pan.
- In a large bowl, combine sugar, eggs, vegetable oil, vanilla, pineapple juice, and pineapple; mix well. Sift together baking powder, flour, and salt in a separate bowl. Stir the flour mixture into the pineapple mixture. Fold in macadamia nuts. Pour batter into the prepared pan.
- Bake in preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
