Description
The Pineapple Moscow Mule mixes vodka with pineapple juice and jalapeño limeade, combining fruity sweetness with a mild spicy kick. In the absence of commercially available jalapeño limeade, a homemade version can be prepared by muddling fresh jalapeño slices with simple syrup and mint, then straining it into the cocktail. Ice chills the mixture before it is topped with ginger beer, which adds carbonation and a warm ginger spice to complement the pineapple and lime flavors.
Garnishes such as pineapple wedges, jalapeño slices, and fresh mint leaves enhance the drink’s aroma and visual appeal. The combination creates a balanced cocktail with layers of fruit, heat, and effervescence that works well as a refreshing beverage with a bit of a spicy edge.
Due to the carbonation from ginger beer, it’s recommended to add it just before serving rather than preparing the drink too far in advance to retain fizz. Non-alcoholic variations can be made by omitting vodka and substituting ginger beer with ginger ale.

Ingredients

Instructions
- Add ice, vodka, pineapple, and jalapeno limeade juice to the glass.
- **If you do not have Jalapeno Limeade (found seasonally at Trader Joe's), simply muddle 3-4 jalapeno slices with 2 ounces of simple syrup and a mint leaf. Strain the syrup into the cocktail to turn up the heat. **
- Top with ginger beer. Stir.
- Garnish your drink with slices of pineapple and jalapeno. Enjoy!
Notes
- If jalapeño limeade is unavailable, muddle 3-4 jalapeño slices with 2 ounces of simple syrup and a mint leaf, then strain for a homemade spicy syrup.
- Add ginger beer just before serving to preserve carbonation, as it is carbonated.
- For a mocktail version, omit vodka and substitute ginger ale for ginger beer.
