  • 1 pineapple peeled and finely chopped into 1/4 inch pieces (about 4 cups, ripe
  • 1/2 cup red onion finely diced
  • 1 jalapeño , seeds and membranes removed (optional, for some heat)
  • 1/4 cup lemon juice about 2 small Meyer lemons (for flavor variation can substitute orange juice, freshly squeezed Meyer lemon
  • lime juice and zest of one
  • 1/2 teaspoon salt sea salt
  • black pepper freshly ground, pinch
  • 1/4 cup mint leaves finely chopped fresh

Instructions

  1. In a medium bowl, add the pineapple, onion, jalapeno, Meyer lemon juice, lime juice and zest, salt, and pepper. Stir to combine. Let stand at room temperature or in the fridge for at least 15 minutes or up to 1 hour.  Stir in the mint just before serving.   Store in the fridge in a covered non-reactive container where it will keep for 3-4 days.
